First pour was crystal clear. The second pour had some haze to it from the sediment. What a wonderful occurrence. A lot of funk on the nose. Very tart flavor with some sweetness as it warmed up. This is an outstanding beer.

Pours a light, slightly cloudy orange, light 1" head that quickly dissipates, very little lacing. Nose is funky apricot and stone fruit, acetic sourness, roasted grain (barley?), chardonnay grape, oak. Taste vacillates pretty wildly - sweet honey at the start, roasted barley soon thereafter, and long, increasingly bitter finish akin to arugula or frisee. Despite the initial sweetness, the finish is slightly tannic as well. Feel is light but a bit slick. A lot going on here, but it doesn't quite gel for me. Still, a really interesting beer and definitely worth seeking out.

750ml bottle. Label is date marked with '6/21'.
Partly cloudy, pale gold colored body. One thin finger of white head, which retreats to an island and a ring. Crackly carbonation upon opening. Leaves behind some small spots of lacing.
Aroma is quite strong. Barnyard and horse blanket funk, lemon, oak, and white grape.
Taste is quite zesty. Lots of herbal and floral flavors, along with lemon, peach, white grape, oak, and apricot. Funk from grass, hay, and barnyard. A little bit sweet, and a little bit tart. Mellow fruitiness in the aftertaste.
Medium mouth feel. A little bit drying. Excellent carbonation.
Excellent table beer with flavors that come from the field. Good food pairing with savory meat, cheese, and baguette sandwiches.

Very good saison overall. Bottle from my latest Suarez delivery to my son in NYC. Woodruff and other spices and herbs made for an interesting contribution to our tasting

Bottle from the brewery in Livingston, NY. Pours an almost clear yellow gold with a finger of rocky white head, nice lacing, smell is white grape flesh, floral white wine, musty apple cider, pollen, lemon candy, funky cut grass, hint of tangerine, pineapple, and barnyard funk, taste is sour pineapple, pineapple cake, candied lemon slices, floral white wine, apple cider, lemony herbal tea, herbal grassy funk, feel is light, bright, clean, and dry. Floral, fruity, funky goodness that is incredibly drinkable. This has ancient elixir vibes, like something that people drank in ancient Egypt or Greece . Yum.
