real heady, maybe my favorite beer i had in here when we visited their new location recently. this is a collaboration with primitive, who i just learned is moving in, super cool. had this from the can, well conditioned, high headed, like three inches of airy white fluff on top of light straw colored beer with a little body to it for what it is, some haze as i pour down the can, but clear through the first third or half or so. super funky in the nose, excitingly so, bretty and fairly mature for something that also reads as kind of fresh due to the hops. a saison ester in the nose, some white pepper spice, fresh tangerine and mango, maybe southern hemisphere hops in this, or even maybe wet hops, seems oily, fruity, up front, and intense, could be cryo too i suppose, bitterness is low, it seems almost candied but the beer is dry overall, great farmy funk overall, complex, new school and old world at the same time, love that. the taste is the same, ferment driven as any good grisette is, lovely brett brux type profile, but also with some grain nuance, wheat, maybe a little rye, a crackery pils note, and then all kind of summery with the hops, which chip in some bitterness and a unique fruit profile through the back half, bold but not forced. its cohesive for also being a lot of things, i think the hops are super well selected and id love to know more, seriously almost an aged hop lambic thing, herbal and neat with the brett, really layered and interesting and it warms up well. fabulous carbonation its almost explosive. fun collaboration, a nice showcase of what these breweries each do well in a single beer. awesome!
