”Do you know what dwells in a glass?” asks Ole, in Hans Christian Andersen's The Watchman of the Tower. Better known for stories such as The Little Mermaid, Andersen wrote this short, cautionary tale for a somewhat older audience. Our quadrupel ale, also meant for the mature connoisseur, is a deep and mysterious libation, dark auburn and full-bodied, its sweetness deceptive. As Ole describes the glasses in turn, their contents become more ominous until, in the sixth glass...

Pours with a nice, full head that settles cleanly and laces the rim well. Appearance is a bit underwhelming... murky brown, more “muddy” than the advertised "dark auburn". Aroma and flavor lean heavily into Belgian yeast character, with clove and coriander coming across slightly sharp (to my palate) and not fully integrated. Could use a smoother balance. There’s a subtle sweetness up front, followed by a long finish of dark fruit and mild spicy bitterness. Improves noticeably as it warms, with better cohesion and expression of the malt and yeast profile. Solid overall, but just shy of refined... it's price point not able to pierce that ceiling.

12oz with a best by date of 6/25/27, opened 3/27/26.
2+ finger sand colored head with excellent retention. Brown body with an amber tint. Early, sticky lacing.
Yeasty, fruity - oranges, cherries, bubble gum and spice in the aroma and flavor.
Light to medium body with high carbonation. Lengthy finish with some heat and a good dose of sweetness but also a surprising bitterness.

I’m not the biggest quad drinker but this was smooth and tasty.

Poured from 12 oz bottle into tulip glass. It’s a muddy brown color with a big, light khaki head and lacing. The smell offers raisin, plum, and earthy malt. Its taste follows with sweet bready malt, raisin, clove, and coriander. It is well-bodied and pleasantly carbonated, and it’s potent at 10.2% AVB. Overall, The Sixth Glass is a top shelf American Quad.

Nice reddish brown with a small, lingering head. Nose is malty sweetness. Taste follows with a very nice mouth feel. Well done.

12/11/25 - I've had two bottles of Sixth Glass
The first bottle I think was "skunky". Maybe not skunky, but off.
It had a full head. The first taste was full and rich and flavorful, subsequent drinks were less and less tasty, although it never really got bad taste.
The next bottle I think was normal. It didn't have much head and it dissipated rather quickly. The dark color looked almost like stout. The flavor was good but not outstanding. the mouthfeel was very tingly and tangy. It was a pretty good beer.
So now I'm gonna drink beer number three so I can come up with some rating numbers.
Nice cream colored head, dissipates to a cap, dark brown translucent. Pretty good taste. Excellent mouthfeel.

1/11/2026 - Just finished a day's labor taking down and putting away all the Christmas decorations. Whew. So I poured myself a glass of Sixth Glass. I was surprised by how good the flavor is. I upped the rating. Yes, this is a good beer.

Quads are just not good looking beers and this one is no exception. Muddy auburn with a wispy fizz. That said this is a solid version considering it wasn’t made by an abbey full of Belgian monks

Poured from a 12-oz bottle into a tumbler, at the brewery.

Look: Cloudy amber brown Edith a one-finger head with decent retention, and considerable finely-bubbled lacing.

Nose: Malt, apple cider, spice, possibly a hint of brown sugar.

Attack: The carbonation hits first, then the malt with a hint of cider comes through, and then the hint of spice.

Finish: Just enough bitterness to balance the attack.

Mouthfeel: Full-bodied, at least sufficient carbonation — maybe a little too much.

Overall: This is a fine quad, and might be even better with a bit less carbonation. I wouldn’t hesitate to order it again, and I’ll probably be buying a four-pack of it downstairs to take home.

Poured from a 12 ounce bottle into a Chimay chalice, "please enjoy by" date is "18DEC2026".

APPEARANCE: Pours a cloudy, dark brown color with one-finger, off-white head, good retention, it settled to a thin unbroken cap, medium carbonation, moderate lacing on the glass.

SMELL: Initially molasses and burnt toast, there is also some farm house funk.

TASTE: The taste follows the nose, initially sweet molasses and burnt toast some nice Belgian farmhouse funk on the finish, the 10.2% ABV is present but well disguised.

PALATE: Full body and medium carbonation.

OVERALL: this is a very good quad, but it's not my favorite, the burnt toast/roasted note was not to my liking but others may disagree, I still enjoyed this beer and rated it highly, I enjoyed it and would have again but prefer Rochefort 10.

A pour into a St. Bernardus chalice at 55 degrees F resulted in a 1-finger off white/light tan foamy head topping a slightly hazy ruby brown colored ale. Moderate carbonation, and the head didn't last very long. Looks decent though.

On the aroma, I pick up very sweet maltiness, a bit of yeastiness there, some dark fruit character, a little bit of vanilla, some woodiness, slight spice in there, too. Smells really good.

On the first sip, the backbone is sweet maltiness upfront...caramel/toffee/brown sugar, then the dark fruits...mainly dates and plum comes through with a light oak barrel characteristic, some vanilla with a bit of booziness and coriander spice mid-palate to the back of the palate. A bit of boozy sharpness to it as well, with very slight bitterness on the finish. The aftertaste is malty sweet and bready yeastiness. It is medium bodied, champagne like feel in the mouth with upper-moderate level of carbonation, semi-dry finish. Would I drink this again? Heck yeah. It is a very well crafted Belgian-style quad, that I highly recommend. Cheers y'all!

Deep mohagany color with nice thin foamy head. Smells of malt, caramel, and raisins. Tastes like the aroma with a slightly dry finish. The alcohol is hidden very well in this one. I think this will be a regular in my fall/ winter rotation.
