I wish they would state that this is a SOUR Saison for the unsuspecting drinker who sees this is made with honey. Aroma is Champagne vinegar, and actually not unpleasant, but I'd call it almost entirely unlike a Saison. The taste is very sour. One sip and your taste buds are out of commission.
There is just a hint of sweetness to go with the extreme acidity. Some fruity business, maybe the residual Belgian yeasty flavor, but then I get a sort of vinegar up my nose. I am amazed to Structures making something like this. I hope it is not a preview of coming obsessions.
