Collaboration with Carton Brewing Company
Brimming Bin is a Wild Ale brewed in collaboration with our friends from Carton Brewing in New Jersey aged on Sauvignon Blanc and Chenin Blanc Grapes. This beer pour a dark golden yellow with slight haze and noticeable effervescence. Bringing the glass to the nose presents distinct aromas of chamomile, sweet pear, rustic bread, and dried orange peel with a subtle grassy funk. The palate unfolds with layers of ripe apricot, tart gooseberry, tangerine and crisp pome fruit. Mildly sour with a medium body and fizzy carbonation, Brimming Bin has a off-dry finish with a touch of minerality.
MALT: Malted Oats, Pilsner, C20, Crystal Oats, Raw Wheat

Copenhagen 3/10 2022. 33 cl bottle from Mikkeller web-shop. A brimming trash bin full of hop flowers on the label.
Pours opaque unclear golden yellow with a small bubbly white head. Settles as thin rim of foam running along the side of the glass. No lacing.
Aroma is medium intense with a tart fruity odor mingling with prominent scent of alcohol. Sour gooseberries with a hint of vinegar, green apples and a bit of citrus concentrate. Sharp boozy edge.
Light carbonation. Slightly thick, oily, lightly tingling texture.
Flavor is intense with a light sweetness followed by a strong tart sourness. Aftertaste is tart with a sharp undertone. Lingers for a while. Finish is dry.
Potent imperial Sour beer.

A good wild ale, a little dry/bretty and quite a bit boozy at 10.9%. Mild on sour spectrum. mild to moderate on the funk. Its a good beer but the high alcohol sort of throws this wild ale off a little bit.

I was surfing the Trillium website amid the lock down looking for a reason to partake in a curb side pickup and stumbled upon this fun concept combining both beer and wine. You get the grape notes from the wine barrel ageing and the smoothness from the ale. It took a few sips to really get the taste down and man was it good. Initially crisp then fading to a smooth, refreshing swallow with a light wine after taste. This was very well done. At 10.9% it packs some horsepower.

330ml (11.2oz) bottle - 20/Dec/18 - poured into a white wine stem at 44F.
Pours a brilliantly clear straw golden colour, much like an oaked chardonnay. Two fingers of snow white foam build up before quickly sizzling out, leaving only a short collar. Plentiful effervescence continuously rises, forming a sheer wispy cap.
Nose: Aromas of white wine grape must, funky wild cultures, grass, hay, rustic bread crust, fresh pear, green apple, orange peel, and a panoply of aged hop floral notes including chamomile and lilac. There's a soft buttery note that I generally associate with oak, but I don't beleive this offering is barrel aged. There is an acetic tartness that doesn't quite come across as vinegar - more like fresh lemon juice - but there's definitely a bit of sharpness that integrates nicely with the overall aroma.
Palate: The ale greets the palate in a surprisingly gentle manner. There is a very subtle grainy sweetness that is very neutral in flavour. No tacky wheat or sticky barley. A quiet note of wildflower honey and fresh rustic bread fade into a very restrained tart element with practically zero pucker force. Once more, it's lemon-like in nature, but dilute enough to avoid being sour. Here, the wild ale complexity begins to surface. Wet hay, grass, white grape, green apple, underripe pear, pineapple, gooseberry, a hint of jammy dark fruit, and some dusty brett notes of overripe apricot, peach, worn leather and old parchment which displaces the lemony tartness and fades into that signature brett bitterness, woody, floral aged hops, and eventually finishing with malty and raw grains. I have to add, that this ale disguises 10.9% ABV like nothing I've ever seen. I had forgot how stout it was, thinking maybe 6%, and when I glanced at the bottle, I was in awe. Half the ABV of this is completely invisible.
Mouthfeel/Body: This ale is light in body, however, it still has some texture to it, and is in no way watery. Incredibly crisp and drinkable - essentially thirst-quenching. Much like its flavour, it shows absolutely no sign of its nearly 11% ABV. Effervescence is quite lively and very fine - nearly champagne-like. After the finish, there's a little bit of cling left behind, perhaps from the ABV, but it's a soft, almost oily cling.
Overall: This is a fantastic little wild ale, and really ticks all the necessary boxes, while possessing no significant flaws. The malt/grain base is practically perfect, the addition of wine grapes in the aging process adds a beautiful touch that gives this a delicate champagne-like character, the ages hops are used sparingly, it's complex, crisp, drinkable - absurdly so, as it hides that ABV much like fine champagne does. I only wish it were a touch more tart, but it's simply beautiful as-is. Trillium and Carton did a wonderful job on this, and I glad I got to have a bottle. Well worth the already modest price tag.

L: Mostly-clear, pale gold. Little bit of a head on pour, but quickly goes down to a thin ring with visible carbonation bubbles.
S: White wine and oak barrel, yeast, pear and apple, must.
T: White wine character dominates, apple and pear, oaky barrel, yeast, bready. Slightly sour finish.
F: Light-bodied, aggressively carbonated. Dry and refreshing. Flavors good but not soft and a bit raw.
O: Not my favorite style, they did OK with it.
