Farmhouse IPA brewed W/ Spelt Malt & Citra Hops.
This is the second beer in our exploration of farmhouse-style hop forward beers. We brewed this beer with a large portion of spelt malt as well as flaked wheat for a rustic, creamy mouthfeel. To accentuate the hops and help dry out the beer we fermented this with our house saison yeast very warm. We then hopped and then dry-hopped this heavily with Citra hops. Its tropical, citrusy and dry and we love it.

We all poured into tulips.
The appearance was a bright yellow hazy color with a finger's worth of white foamy head that slid off at a moderate pace. Slight lace ran here and there.
The aroma had a nice blend of sweet oats, citrus, light funk/hay/grassiness, touch of white pepper, light tropical/mango sweetness and ended with a little bit of green apples.
The flavor was a super nice blend of sweet to spice to funk and had a nice bright clean maltiness rolling into each other. Nice clean malty to super lightly spiced (white pepper) sort of aftertaste.
The mouthfeel was about medium bodied with a fair sessionability about it. Carbonation felt good. ABV felt appropriately done. Finish was pretty smooth, slightly sweet through those oats and had a touch of citrus here.
Overall, very nicely done saison that I'd have again.
