Imperial Dark Saison with Grilled Orange Aged in Bourbon Barrels
This beer was designed to showcase the interplay between citrus, sugar, and yeast. We brewed this beer with our own house made dark candi sugar as well as over 10 lbs/bbl of Valencia Oranges that we grilled over hardwood for a caramelized, sugary flavor. It was fermented colder with our expressive saison yeast and then left to condition in third use bourbon barrels for over 6 months. Expect notes of port wine, citrus, raisins, figs, and oak.

Poured into a tall tulip, the appearance was a dark brown close to black color with a two finger off white foamy head that slid off mildly. Delicate woven to ringy lace tried to stick around the glass nicely and ended up sliding off in some webbed/legged to semi-stringed lace, looked really nice.
The aroma started off with a semi-sweet orange to citrusy sort of pulpiness and then flowing into a gentle roast. Moderate sweet milk to dark chocolate sweet and bitterness. Slight rolling bitterness, clean, aromatic and full. Woody sweetness, semi-barrel-esque sort of ordeal.
The flavor was a gentle rolling sweet to roasty and quaint bitterness, very pulled back with the pulpy sweetness doing it's good favor to meld with the milk and dark chocolate. Pretty dry and pulled sort of sweetness with a substantial bitterness of dark chocolate in the aftertaste.
The mouthfeel was about medium bodied with a fair sipping quality about it. Carbonation felt on par. ABV felt substantial. Finish was semi-dry with the roast pulling a little bit of "grip" along my tongue.
Overall, one of those "odd" dark saisons that somewhat wants to lean towards some sort of Belgian imperial stout. Me, I loved it for for what it was, but as a saison, is it, really? Hell, if I know, just try on your own if you see it.
