16 oz can, canned on 6/25/21, into GITM Teku.

Super thick and opaque medium yellow, with a creamy 2 finger head that recedes very gradually to a finger and leaves thick glops of lacing on the side.

I forgot what fresh Galaxy smelled like. This is such a juice bomb it's unbelievable. Huge juicy pineapple triangles; dried mango, juicy papaya, peach, some fruity pebbles notes, slight mushroom-y cannabis, and sweet grass.

Flavor is a super green and vegetal yet like a Pseudo Sue (this is why I rate it a 3.75, maybe update later) but has the makings of a Trillium beer. That in and of itself is quite monumental. Trillium is hard to match, and of course my peeps at Southern Grist are going to do it. Cloudy, pillowy yeast, slight banana creme, and then a huge hit of bitter unripe pineapple, dried papaya, stiff mushroom, coconut chips, banana chips, then a finish of bitter wet grass and wet pine. I anticipate this will really bloom in the weeks to come.

Feel is juicy and creamy and incredibly resinous. I can't emphasize enough how much this beer drinks like a Trillium. Has their signature all over it. No burning diesel-like heat though, that's the only difference.

Overall, if I didn't know any better, I'd have thought it was a collab with Trillium. Super tasty, but very green yet, and will definitely need a month to open up. That's the great thing about SG IPAs, they last a super long time in the can before they go south, much like Tree House.

This particular offering is a solid 4.

Edit : 2nd can hasn't opened up much, so I'll push it to the back of the fridge. They have the longest life of any IPA brewer I've had. Their packaging techniques are pristine. Even though Mixed Greens isn't their best series, it still sticks the landing.
