16 oz can, born on 7/23/21, into Pipeworks Willie.
Gold color with slight chill haze, perfect pilsner appearance, with a creamy head of 2 fingers that recedes to a wispy ring.
Aroma of hay, pilsner malt, smoked oysters, a little salt, and slight earthiness. Seems to convey exactly what the beer is about.
Flavor is of bready and crackery pilsner malt, hay, poignant hop greenery, and yes, milky oysters. The oysters are there in a way that is subtle but present. It's incredibly balanced and artistic. It's not an "oyster beer", it's a "pilsner with oysters", and the distinction is absolute. It takes the pilsner beer in a different direction and gives it some depth without molesting its simplicity. And the "Virginia Table Pilsner malt" brings a completely different angle to the 'Crisp' series - one that I prefer, substituting the normal Czech aggressiveness of the Crisp series with a softer and easier German approach. As it warms a bit the oysters take on a more robust role, though again, never becoming overwhelming.
Feel is very crisp, tight, carbonated. Slightly starchy on the back end but that's okay with me in a pilsner.
Overall, either this was a serendipitous effort or these guys really are geniuses. One of the best pilsner beers I've ever had, and along with Grace and Darkness, probably #1 or #2 for oysters in beer. Fantastic work.
