This open-fermented, oak barrel-aged saison with Strata wet hops showcases the interplay between Brettanomyces and the fresh hop's aromas. We started with the culture used to make Emmeline, our beloved farmhouse saison, and open fermented it in Miramar. It then went on to rest in former red wine barrels from Napa Valley for nine months. The Strata wet hops were picked in Oregon and added to this brew the very same day.
