another really good beer from these guys, this is done with hibiscus, orange peel, and some peppercorns, all quite subtle. usually i am not huge on clean saisons that just use cultured french saison yeast, i like a little more funk and rustic character in my saison, but this has a lot going on without that, and it works really well. i think the yeast is even a little restrained here, not done as hot as maybe it often is, light white wine notes and faint astringency to it in a good way, but its out of the way too. the color of this is awesome, jewel tone clear shiny pink from the hibiscus, and holds a nice airy head from the tap. the hibiscus has a fruity tea character, red berries, rooibos, strawberry candy, nose and taste the same to me here. the citrus is subtle, is wrapped up with the yeast, and adds some late bitterness to my palate where hops do not in this instance. pink peppercorns above other ones, also super compatible with this yeast, everything so intentional and dialed in here, like they have been making this for years, which i do not think is the case. i love the light body but the flavor of the grain still coming through, the carbonation is solid, and the hibiscus is natural and enlivening. fun recipe, great execution, this place rules! i believe its a collaboration with the soon to open common language brewing, excited for that, especially if they are going to be making this kind of beer!
