Collaboration with Revel Cider. Farmhouse Saison Aged in a Cider Barrel & Blended with Revel Perry. 375ml.

Batch three. An ongoing collaborative table saison with some adjustments along the way. For this one we kept the grain base the same, introduced some new yeast, then aged it in a borrowed cider barrel from Revel, and finally blended in some of their delicious perry. The result is an incredibly quenching, dry and flavourful farmhouse ale. A touch of acidity and some dusty brett funk from spending six months in the barrel. The pear is fresh and bright, while adding a delightful texture. Floral and spicy from the Hallertau Blanc & Saaz dry-hop, backed with a light malt base.

Bottle: Poured a clear golden color ale with a large white foamy head with light retention and minimal lacing. Aroma of Brett notes with some strong tart/sour notes is OK. Taste is a mix of light pear notes with strong tart/sour notes with some acidic notes also perceptible. Body is about average with good carbonation. Enjoyable but somewhat too sour and acid which hides some of the more complex notes.

A:
Pours an anemic, hazy litchi color with a thick bleached head that clumpily drops to a lumpy cap with descent retention and patchy lacing. (4)

S:
Funky, doughy yeast with a touch of lime zest brightness. (3.75)

T:
Earthy, peppery, doughy seltzer water with some vague phenols. (3.75)

M:
Fizzy, thin, light, dry. (3.5)

O:
All right beer.
It is pretty flavorful for being 'light' but is pretty 'light' to pack much of a punch aroma- or flavor-wise. It looks okay with a weird milky color. The aroma and flavor are both pretty dough-rising-heavy with a little peppery hop flavor. Neither amazing nor terrible. Better than Bud Light, but I would opt for something heavier if I had to choose.
