This Saison is almost crystal clear. It pours a golden amber and shows off a healthy amount of carbonation. The head is paper white, billowing, and very dense. The retention is excellent, as is the chunky sheets of lace that are left behind.
The nose is alive and very bright with heaps of fresh mandarin orange and clementine. A bit lemony as well. Its sage comes through in a beautiful and enticing manner; green and fresh and works so well with its citrus character. It's doughy in the center and grainy on the outskirts.
A full, wheat-forward, citrus infused smack of tartness starts things off in a big way. It's quite lemony and quenching. Fresh, green herbal and floral notes quickly follow. A fast dose of bready malt peaks through in the finish but it's the tart lemon quality that takes the cake.
Its citrus derived quenching quality defines the feel. Light to medium bodied with a below average level of carbonation for the style. Dry in the finish and extremely refreshing.
Sage Farm takes the tart quality that's inherent to the style and makes it the star of the show. It's bright and citrus heavy with a pinching tartness that makes it hard to put down the glass. Crank up the carbonation and this would be heaven. It is still unique and very enjoyable in its own right.

Sweet sage grows on ya but not a pints worth. Wish there was more yeast character n a bit less lacto OR some pedio &/or Brett. The sage helps and cuts the simple lacto tartness but a more complex and interesting base beer is needed.
