Brewed with Austin Beerworks, this collaboration brought together old friends, new friends, a couple yeast strains, lots of hops and some good times! We wanted to put a unique spin on the traditional Belgian Tripel so we explored the Norwegian Kveik strains, known for their ability to ferment at warm temperatures and produce beautiful fruit and citrus flavors without all of the phenolic and harsh tones usually brought on by warm fermentation; and blended in a Belgian strain that helped to produce a beautiful bouqet of apricots, baked apples, bready malt and a touch of lemon zest. We dry hopped this Tripel with Huell Melon, Strata and Citra. This beer is truly a showcase of the depth that yeast can play and the harmony of many ingredients coming together to create a lovely beer!
