We present The Third Round.
The Third Round began its journey nearly a year ago. Brewed with wheat, a touch of spelt, and local pilsner malt from our friends at Peterson Quality Malt, this wild ale fermented in Chardonnay barrels with an amalgam of ale yeast and a special house blend of Brettanomyces. Post fermentation, it continued to rest in these barrels for nine more months where we eventually dry-hopped in the barrel with a light addition of Hallertau Blanc and Nelson Sauvin. Bottle conditioned for a time and dipped in wax, this beer represents this past year of Foam. Lightly tart, but not sour, The Third Round reminds us of fresh citrus fruit, dried hay on a Spring day, tropical funk, pear, and spice.

Moderate pour yields a nearly one inch white head over a slightly hazy, golden body with some sticky lacing. Nose of citrus, slight white wine, and slighter oak. Taste mirrors nose but the flavors are definitely more intense than the aromas. There is a bit of funk present and alcohol, for an American Wild Ale at 8.1% abv., is very noticeable. Nice and enjoyable, slightly tart finish. Real nice feel and overall, I'm diggin' this and would recommend this to everyone. Cheers!!
