sadly i have not had very much of their wild stuff, so i was majorly pumped when this was on tap when we were in. nice renovations to the tap room here by the way, its been too long, but it looks great, increases capacity and service, and is a nice improvement. this beer is fire, a mixed culture brew in cedar and oak, incredibly funky, well refined, and unique. its glowing yellow in the glass with an inch of white head, softly hazy, lots of lace, looks fantastic. the nose is amazing, makes my mouth water immediately but not from acidity, its only moderately tangy to me, its the lambic-esque funkiness that does it, and this is strikingly mature and interesting in terms of fermentation profile. the woods are highly aromatic to me, the base beer quite simple really, and the level of execution extremely high. the flavor is great here too, and the contribution of the cedar is significant, adding to the bretty funk thats already here, and giving it a different kind of maturity, really earthy in a unique way, and i still taste the oak too, newer, with a hint of vanilla, light white wine elements as well, so neat. the ferment is epic, way more funk than sour, really evolved like this has been cooking for awhile now, but its still so bright and alive to me. i drank an absolute ton of awesome beers during my trip back east, but this among the very best of them, and it makes me that much more excited about what these guys are doing. this is traditional and rustic in a lot of ways, but also unique to them and quite progressive with the cedar, really special stuff!

Lemon citrus oak and Funk in this yellow colored beer. Really Crisp taste with a bit of bitterness. Solid and easy drinking and a pleasure to Imbibe.
