Carried this re-release from the curb at Beermiscuous. Glad I did on several counts.
First, I have not paid enough attention to Cruz Blanca. My bad. They have a mega-cool West Loop taproom and what looks like a taqueria menu that I want to dive into.
Second, Saison Blanca helped me recognize that the saison can be designed for something other than the northern French/Belgian kitchen. Saison Blanca has lime in it, usually a flavor found in the Mexican kitchen.
Of course, this pairing changes the saison so that its foam and protein swirls are less vigorous and the Smells are more citrusy and less hard-fruity than the Belgian standard. But a Saison integrates with the kitchen and its job is to let the food do its work and, if the saison is good, even improve the food. Saison Blanca probably does that. (My bad again in that I drank it with a red sauce for pasta.)
So I promise to have Cruz Blanca again and pair it with, hopefully, their Mexican food. But restaurants are getting dicey again. Hence I will try Cruz Blanca with my Mexican cooking. This will test it as a saison... which is supposed to improve mediocre food. Salud !
