A funky, floral flourish. Brewed with rose hips and sorachi ace hops and then fermented with a combination of saccharomyces and house strains of brettanomyces. Tokyo Rose presents a surprisingly full opening mouthfeel, high minerality, and subtle sweetness. Champagne-like, dry finish.

Shelf-life: 12+ months, store at cellar temperatures.

a mixed fermentation saison with rose hips, and a very well executed beer, even if the wild aspect in the yeast is a little more mild than my personal palate would have preferred. the beer is really well made, frothy headed from the tap with the faintest pale pink hue to the wheaty looking brew, light haze and lots of bubbles. there is plenty of the rose hip in the nose, tight and fleshy, fragrant and floral, even perfumey, sort of hibiscus-esque, but more vegetal too, natural though too. the saison is nicely constructed, its frothy and hearty grainy feeling, but light, dry, and delicate to drink, some raw wheat in here i would think, lots of character for how simple it presents itself as being. the yeast is more siason than anything else, i am missing the more interesting side of the mixed part here, i get some really light brett, but its too new, not hardly developed enough to impact this beer much, aside from contributing to its final dryness, the funk just isnt there. i similarly get a little lactic sort of tang building, but its way behind the white winey saison strain. great carbonation and lots of flavor through, even without a huge presence by the sorachi ace hops, which i wished for more of as well. some cool beers happening at halo, this was a pleasure, even in its immaturity...
