a neat funky saison aged in both white and red wine vessels and then blended together. i think they did a cool job with this one, but its not as interesting or as obviously high quality as i hoped it would be. i have heard a lot about these guys and was hoping to be floored, but i will settle for good beer. the red wine is much more robust than the white in here, raspberry and blackberry and plum notes to it, but a not that clean medium sourness, minerals and grain residuals with it, not cheesy or cheap at all, but not that well refined either, unique in a way, wild maybe, but not as complex or as mature as i feel like i want it to be, and while i do taste the wine in the beer, i dont get a lot of the oak that its aged in. its also got a little more malt to it than i was anticipating, which overrides the yeast nuance to a degree. tannins and apple and pear, very fall profile to this, slate and brine and earth too, good carbonation, very mild funk. it tastes young and not all the way there yet, but its cool to have the white and the red wine wood treatment in the same beer. excited to have this on tap in colorado, but it wasnt as impressive as i was hoping for...
