incredible botanical forward barrel aged funky saison here, done with pineapple sage, szechuan peppercorn, and lemongrass, a wild combination of ingredients and a sensational result! the packaging is sharp, and the bottle cap pops with a hiss, and some brett conditioned looking white foam rises up out of the neck, but slow enough that we can still pour it. lovely color on it, a light copper tone, richer than blonde, clearish, and with a high airy white belgian looking head on it and racing carbonation, looks killer. the aroma of this is striking, tart but not overly so, funky but not super developed brett or anything yet, fresh from the herbal element, the lemongrass makes it tropical, the sage aspect is neat with the oak and vinous aspects of this, and the szechuan is pretty mellow to me, plenty of oak, a neat ferment to say the least, and a neat lightness for it being this strong. the flavor is all of the above, the lemongrass and sage go great together, tea-like, juicy, a little bitter, but not astringent or harsh or green, and i like the deeper malt character this has, less dry and wheaty than others like it, good balance for the botanicals, none of the numbing sensation scechuan often brings, but i dont miss it. i like the tartness this has, but its not super bacterial for how mature it seems, white wine notes all through it, mellowing oak, this is really complex and good, more farmy and wild as it warms, medicinal brett, rushing carbonation through the whole bottle, amazing overall complexity and quality, as well as bottle conditioning. these guys have done it again, this is what they do best. love it!
