subtle and amazing, this is an oak fermented grisette with douglas fir tips from their property. its not overly piney, but there is a ton going on in a very light and drinkable beer here. golden and pretty clear in the glass with a heaving white head on top and lots of lace as it drinks down. the aroma is lightly funky, not quite bretty but more rustic and complex on the fermentation side than just a familiar cultured saison strain, light pear and pineapple notes to it, vinous, nothing sharp or sour at all. the pine element is fresh and appealing, somehow more summery and less wintery than it often is in beer, and it kind of serves to take the place of hops, with some late spiciness and a fresh herbaceous quality that gives this a lot of life. the malt base seems real minimal to me, a little pale wheat and pils could be all, its delicate and dry and simple. the flavor from the fir tips is great, but in combination with the yeast and the oak, its really dynamic and impressive. lots of terroir in this to me, and everything comes together really well. the fir climax is late and the beer is dry so it pops at the end. overall maybe not as robust and in your face as i thought it might be, but i settled into it quick, its an excellent drinker and full of nuance. everything was impressive here but this was one of my favorites!
