oak fermented brett saison with the special new zealand hop, not one i know too much about, but it comes across as mighty distinctive in this otherwise pretty subtle brew. like the brett isnt crazy mature or overpoweringly funky or anything, the grain is simple and clean and light, and even the oak is more of a background thing, so its all about the hops here, even though the base beer with all that is quite interesting, just mellow. the hops smell and taste very southern hemisphere to me, some slightly familiar lemongrass and white wine grape characteristics, but lots more going on here too, including meyer lemon, lemon curd, citrus rind, and green melon, its floral too though, polleny and springy and blooming, and its rather pungent in terms of the dosage, such a cool hop. its neat with the light bretty funk this has, and i could see it being cool in more sour beer too. there isnt a lot of bitterness here but there is a slightly oily linger from the hops, some staying power on the palate even though the beer is dry, and i dig that in this context too. overall this is wildly unique and delicious, made by the cool hop varietal, but nicely crafted underneath that too, light and drinkable and bubbly and dry with just enough brett and oak character, these guys are killing it right now!
