a wonderful beer from these guys, although most of them are. a little different here though, a dark farmhouse ale made with whole figs. lots going on in this rich mahogany to light brown brew, frothy tan headed, looks autumnal and belgian. it smells belgian on the grain side too, that sweet earthy complex chateau type malt here, molasses and maple notes, not overly sugary or dense either though, a raisin note from the fig, a gummy date thing too, light rum and port wine, walnut and dry cocoa, birch syrup and light white pepper, a subtle saison ester here no bretty funk or acid or anything more assertive, really appealing. awesome complexity in the flavor too, light smoke to this, more raisin from the fig, some fig specific character though too as it warms, red flannel, cedar closet, tanned leather, old mans hat, warming and definitely a fall complexion. maple and brown sugar and bread crusts in the malt, not as sweet or as full bodied as it first seems, nice prickle of carbonation through it too, and a smooth and cohesive beer overall. really pleased with this one, the figs and the malt and the yeast all work together real well, and i am excited to have scored a bottle to open up in a few months when the weather chills off. this is awesome stuff! like a cross between a belgian dubbel and a biere de garde.
edit: months turned to years and ended up popping this summer 2025, more or less three years from above review, and its amazing, seems well bottle conditioned now, more biere de garde for sure with appealing oxidation albeit minor, drier now but not at the expense of grain depth, and the figs are so well incorporated, light spice to the yeast, still with its malty body, but quicker, elegant and insanely well refined, this has to be at its peak right now. improving the overall score slightly, we dont get to this point of the quality isnt absurd. not sure i realized this was a collaboration with wheatland spring until i examined the label, thats cool. beautiful flavors and texture, lights out and worth the wait!
