oak fermented grisette with brett and mustard blossoms, the second mustard beer i have had from these guys, so cool, modern dry hop on it too, delicate but flavorful, more subtle than expected on both the added botanical and also the brett, but its wheaty, dry, and flavorful, unique too, real cool ferment on this even if its understated, and overall another slapper from these guys, so fun to visit this place, epic draft list! sunny yellow color to this one, still bright but not clear, average white head but soft and with tiny bubbles to it. aroma of dried herbs, green tea, light lemon, raw wheat, and light farmy funk and saison esters together, maybe not totally brett fermented, or younger if it is, a little tang and mouthwatering character too. pear and green apple and citrus and watermelon rind and shiso leaf herbaceous uniqueness to this, the mustard is subtle and is slightly vegetal but in an endearing way, and there is a nice troical limey dry hop here thats super complimentary to it, but maybe a little more in front of it. more funky than it smells, especially as it warms up some, but i still also get some almost belgian character to it, a nice interesting ferment, mild as it is, light dill and lemon to finish, really cool beer. could use slightly more carbonation with this wheaty body, but i love the low alcohol and the light citrus tang here, very clever stuff, perfect for this time of year!
