an oak fermented grisette with some subtle but nuanced funky yeasts, another awesome beer from these guys in the saison family, they just do such a good job here, everything is so thoughtful. this is mostly clear, frothy white headed from the can rising a couple inches high and lasting, bubbles rising up, looks like a belgian blonde and kind of smells like one too. i get some estery yeasts, almost a french saison vibe, some banana and light spice tones, but also some new brett, not yet taking this to dried out funky town, but still making it farmy and distinctive, white pepper, lemon, and verbena notes as well, delicate and summery, a bit hoppy. the flavor is all of this, ever so slightly tart, pils malt seems to be the lead dog on the grain side, this is extremely light, its floral and then a light biscuit note comes up to balance, herbal with the hops in the back half, some rustic yeast character rolls in, some higher tone saison type esters too, the brett definitely in the mix, really complex for being so completely crushable. i love the effervescence, light body, creamy head i have to drink each sip through, and overall attention to detail. this is more refined than a lot of grisette types are, just beautiful beer in great balance. i love this brewery!
