2020: This is Dovetail’s second season of Framboise. 2020 is a 13-barrel blend of spontaneously-fermented and traditionally-made beer from 2017 and 2018, that then spent 7 months on nearly 700kg of red raspberries.

2019: A blend of four barrels of our traditionally-made, spontaneously-fermented beer from Fall 2016 and Spring 2017, and aged for 10 months on 225 kg of Michigan raspberries.

Almost opaque ruby red with a short but soft pink head clinging with a lightly bubble collar.

A very jammy raspberry nose is seedy yet soft, but also funky.

A bit of pungent talc, also present in flavor, gives way to wonderfully juicy berries galore.

Another spontaneous brew with a pleasant fluff by Dovetail, the powder dry finish is particularly nice as the acid level here is a little closer to the range I prefer.

10/11/25 (Dovetail Brewery Chicago, Illinois) - Comped pour, volunteer shift. Draft poured into a plastic cup for the festival. Brewery notes: Framboise - Sour raspberry ale, 5.8% ABV.

Appearance: Dark bronze rust base, bright white bubbly head, leaves lacing on the small 7 oz plastic cup. 4.0

Aroma: Beautiful medium full strength raspberries, smells delicious. 4.5

Taste: Consistent with the aroma, tart raspberries, dark cherries, blends well. 4.25

Mouthfeel: Medium acidity, drinks light and easy, fruity sweet, but acidity balances this out. Raspberries start to finish. 4.0

Overall: Solid pour, Dovetail produces great lambic and fruit beers and glad to finally rate this one. 4.25

Delicious
Color is medium red with a pink head
On the nose is fruit with raspberries coming to the top
The pallet is sweet raspberries with a little little bit of sour but mostly tart.
Leaves the mouth slightly puckered and wanting more.

Pours hazy red with a fast fizz and a light, airy head. Aroma is raspberry, without a doubt. There is a yeasty quality to the nose of the beer. Taste is distinctly tart; not sour, but lip puckering tart. Again, the raspberry is not only present but front and center. The beer is light, very light, and clean tasting.

My bottle says 5.8% ABV. I have the same year.

Had on tap. Bright ruby red with pink tinted white foam. Raspberries smell fresh, with oak, barrel funk, and acidic lacto. Taste is more complex, using the juicy, skin, and seeds of the raspberry, with tons of oak, barrel funk and flowers. Moderated apple, hay, lacto and lambic sugars present too. Finish is crisp, sour, and satisfying. Rest of body is full, juicy, and complex. Really nice work here

2019 vintage; drank 7/12/19 @ the Beer Temple.

Bright pink appearance.

Small white-ish/pink head; minimal lace.

INTENSE raspberry nose, with a bit of tartness lingering on the end.

Sticky, medium mouthfeel.

Sweet raspberry flavors up front; with a bit of an acidic bite on the finish.

As it warmed, it got a bit more punishing.

A nice fruit bomb that's got a bit too much kick on the finish for me. Certainly not boring!

Drink fresh, don't age it. 96 points from Wine Enthusiast, not bad.

Draft at the brewery, served in a 12 oz. goblet. Saturated opaque reddish pink, with very faintly pastel pink foam. Acidic aroma, fresh raspberries and wet wood.

Sour raspberry, seedy, leafy, juicy then very dry with a light Brett presence in the aftertaste. Slight tannin and dill from the fresh oak barrel. Fruit comes through in a big way, intense but natural. Light to medium bodied and well carbed, spritzy feel.

Overall this is really nice, not too sour or sharp in acidity (varies by release). Looking forward to more fruit experiments down the road.
