Spontaneously fermented beer made with black currants.
CASSIS is a two-barrel spontaneous blend from Spring 2017, that was aged for two-years before we added 120kg of Midwestern-grown black currants, and aged for an additional 5 months.

Cellared bottle for 1 year. Dark cranberry red with a tan sudsy cap. Smells features the sour and jammy black currant with oak and funk. Taste is jammy with a dark complexion up front to the currant with hints of grape, decent funk and oak bridge, with huge brett on the finish, especially as it warms. Feel is funky, sour, light, and slightly acidic. Pretty wet up front but slowly dries out during the sip, could be drier by the end but solid. Nice cassis lambic styled ale for any time of year

Deep saturated purplish crimson, looks more like natural wine if it didn’t have a cap of pastel pink foam on top. Opaque and richly colored.
Uniquely fruity black currant aromas, rich and vinous, seedy dark berries. Initially a touch metallic but it fades after a few moments. Slight whiff of Brett funk, overall it’s fairly fruit forward.
Tart and fruity, vinous black currants really have a nice depth, some light oak traces and dill notes, which is usually a sign of a fresh oak barrel or a rye barrel. Dense fruit flavor, black raspberry tea, spontaneously fermented red wine. Crisp acidity and carb, finishes dry. Definitely one to convert the wine drinker in your life. Excellent stuff.
