New year, new beer! Sugar Creek Pilsner is a beer about 80 years in the making—but we'll start 5 years ago when the folks from the Midwestern malt house Sugar Creek Malt Company brought back 200g of seed of an heirloom winter 2-row barley originally grown outside of Vienna that hasn't been seen since WWII.
Caleb and his family hand-harvested this descendent of a Moravian-Haná variety until they were able to grow that original 200g seed packet to 10,000lbs of grain and called it Edelweiss. A select number of breweries were able to brew with Edelweiss this year.
For our Edelweiss beer, we triple-decocted, coolshipped and open-fermented before it went into extended lagering, just like they might have done all those years ago. A very easy drinking 4% ABV, the malt showcases notes of flour and bread dough, while the herbal and spicy Saaz hop balances. Enjoy a couple, two, tree!

Had on tap. This was really cool to try, love the history of it all. Murky pale golden body with a finger of white foam for a head that died down quickly, lacing abounds. Bread dough, lemon, peach, and floral tones in the nose. Taste is very similar, sweet edges, almost like shortbread, define the beer, with some grass added to the floral hop tones. Feel is pale yet full, malty and smooth with good yeast ester textures, lighter bodied.

An excellent beer with unbelievable crispy malt cracker and lemon zest bread notes. Same on palate as in aroma. Fantastic dry crispy finish. Great fall off a cliff dryness. Gorgeous for the ABV.

16oz tallboy poured into Dimpled mug.
Canned on date 1/6/22.
Appearance: Pale yellow bodied beer with huge bone white head resulting from hard pour into the glass. It essentially looks like a milk pour. The head is a thick and creamy dense foam with great structure. As the head settles out, sticky lacing is everywhere. Great head retention. This beer looks like fine art.
Smell: fresh baked bread / biscuits / doughy notes abound from the malts. Hint of honey and corn sweetness. Hint of grass, herbal lemon grass, and light lemon notes from the hops.
Taste: Dough malt profile upfront. Lightly spicy and herbal hop notes with a hint of grassiness. Light lemon tartness builds into the finish with a hint of corn sweetness and more doughy bread notes.
Mouthfeel: Light bodied beer. moderate carbonation. Soft body / texture. This beer drinks light as a feather in the best possible way.
Overall: Dovetail did really well with this beer. Malt profile of a Keller / Zwickel and a hops profile of a well made authentic German Pilsner. This is just incredible crispy beer.

Hazy canary gold, ample foam rises to the rim of the glass. Two finger head, some minor spotty lace left behind.
Pleasant biscuity aroma, lemony noble hops, fairly soft and delicate, a nice dose of fresh bread from the special Edelweiss malt.
Doughy country bread, lightly grassy noble hop bitterness, vague lemony note.
Pleasantly round feel, easygoing carb, the mild grassy herbal bitterness lingers in the finish. Eminently drinkable.
Overall this is excellent, an unfiltered pilsner brewed with a variety of malt that was thought lost for the better part of a century. Very cool to see history revived like this.
Feb. 2022: Last can, starting to notice an increase in buttery diacetyl. Not overwhelming, but it's definitely more present now. March 2022: Diacetyl present in draft at the brewery. :(
