For this batch of saison, we utilized a centuries-old Belgian technique that filters wort through oat hay prior to boiling. We then fermented and aged it in oak with our unique blend of wild yeast and bacteria. The extended time on oak provided a delicate and nuanced saison that pays homage to a timeless beer style.
