In February 2019 we had the pleasure of hosting our friends Matt and Cobi from Tilted Barn Brewery - together we set out to create a beer that wove together unique threads from each of our respective homes into a cohesive yet wholly collaborative effort.
Persimina is a farmhouse ale made with paw paws and peaches. Starting with a grist of Valley pilsner malt, wheat, oats and spelt we gently hopped Persimina in the kettle with locally grown hops. In addition to an overnight stop in our coolship, we added wild yeast isolated from Matt and Kara’s farm and our own farmhouse culture. After several months in an oak foeder, it was transferred atop a mix of fresh peaches and paw paws, the latter coming from Hunts Brook Farm in Waterford, CT. A fruit native to the eastern United States, paw paws have unmistakeable tropical fruit qualities reminiscent of pineapple and banana. Digga from Hunts Brook and a small group of growers are leading the charge in cultivating this unique fruit here in Connecticut. Following a complete re-fermentation on the fruit we packaged the beer and allowed it to naturally condition in bottles and kegs.

This one pours a slightly hazy golden orange, with a small head, and lots of lacing.
This smells like peach/stone fruit in general, white wine, orange, vanilla, and oak.
I don't really know what to expect from paw paws, so I kind of mostly just get peach, which is fine. It's a light, airy, and spritzy fruitiness, with a big of juice, and a bit of tart. Nothing is really intense, but it's very tasty, and most of all, refreshing.
This is light bodied, and very cleanly fermented and cleanly our, with a great drinkability.
Though I'd maybe want a little bit intensity to this one, it's undeniably tasty, refreshing, and easy to drink.

Pours a slightly hazed light golden body beneath over a finger of pillowy white foam; head recedes fairly quickly to a paper-thin cap, moderate creamy collar, and thick splotches of lacing smattered conservatively around the glass.
Aroma overarching funk with wisps of floral, springtime air, with a peach sweetness just below the surface; touch of overripe mango peel and a vague, encroaching tropical sweetness fleet over the middle, while faint lemon peel appears on the very back end.
Taste opens with a citric twang of sweet peach meshed with lacto funk as light elements of floral grass and musty basement develop in the background before juicy orange and lemon zest even out on the finish.
Mouthfeel is moderately tart/acidic, with an oily light-medium body and spritzy moderate carbonation offering an extended contrast along the tongue; briefly wet mid-palate quickly becomes bone dry, with a juicy lingering through the swallow.
A heavily balanced fruited wild ale, composed in every aspect but never quite bursting forth in a truly memorable display of character; still, even as it plays it safe with moderate expression, the brew is comprehensively well-developed and soundly structured, and thus undeniably enjoyable.

Pours a pale, orange-yellow with no head, just a tight band around the shoulders. Nose expresses big peach aromas a little reminiscent of Smarties candies. Taste expresses more peach and some soft stone fruit. There's almost a milkiness to the flavor profile. Mouthfeel is light and bright with an almost puckering astringency. Overall, a nice fruited farmhouse; however, the peach really overshadows the delicate characters of the Paw Paw fruit.
