Open fermented saison

This one is for the saison lovers. With Bloom’d, we explore an entirely new fermentation profile - one that layers modern saison character with our approach to farmhouse ales. Following our spontaneous brewing season last April we brewed Bloom’d, sending the hot wort into our coolship. After a night of cooling exposed to outside air, we pitched a single saison strain (a first at Fox Farm) and let Bloom’d ferment in our coolship over several days. The beer was then transferred to one of our oak foeders typically used for farmhouse ales - there our usual house mixed-culture (residing in the wood) started to shine through little by little over a period of four months. Bloom’d was bottled in August and naturally carbonated to a slightly higher level than our typical target. Up front, Bloom’d delivers on the qualities we look for in a saison: characterful yeast, energetic carbonation, firm hop presence. While it’s dry in the finish, the stone fruit and lemon zest we’ve come to expect from our farmhouse ales lends a level of depth and balance.

Batch 3, bottled Oct 2023. Served in a tulip. Pours a lovely , honey-gold hue with a slight haze to the clarity and a rocky, three-finger, bright white head. Nose reveals notes of lemon zest, green apples, yeast and funk, in order of appearance. Funk is less pronounced in the flavor profile; however, lemon zest really pops. Mouthfeel is light and bright with a mild acidity and a pleasant, assertive carbonation. Overall, lovely and complex with being overly acidic.

Batch 2; October 22

Appearance: pale orange / yellow bodied Saison with a huge fluffy bone white head. The head on this Saison has good staying power, but eventually falls down to scant random film on top of the beer. A quick swirl in the glass brings back lots of head immediately.

Smell: Tart citrus paired with mineral heavy well water & wet straw.

Taste: This is a very bright and clean tasting Saison especially in the finish. The tartness perceived in the aroma of this beer is not as big as the nose suggested, but that's a good thing to me. The tartness is pretty smooth and it's without a doubt citrusy lemon goodness. Getting straw and dry oak notes for sure. Just like in the nose, you get some prominent mineral heavy well water notes also.

Mouthfeel: Light bodied Saison with moderate to high carbonation levels. The texture of this beer is really quite impressive! It's got a softer body with creamy carbonation yet still has a crisp & clean finish. All these factors make this Saison infinitely drinkable.

Overall: I immediately thought this tastes like a petite /table saison version of Saison Du Fermier from Side Projects. There are definitely mixed culture saison vibes going on here, but according to the description... this is clearly a spontaneous fermentation Saison created from the Fox Farm Coolship. Either way, I really like what's happening here in this Saison; even though my favorite Saisons have a more rustic profile than this particular Saison. This would be a great beer to pair with almost any food, I can see this being a very versatile beer to pair with food.

Beautiful color of honey and peach skin, semi-cloudy; lively carbonation; very nice head, white and relatively thick, spongy. Incredibly fresh and vibrant aroma; lemon and lime; intoxicating floral tones; lavender. Delicious taste of fresh lime and orange; wonderful fresh tangy flavor; light Riesling wine notes. Medium-heavy body; semi-creamy with a light tart coarseness; fairly juicy character.

This is a simply incredible saison. It exudes more fresh tropical and citrus fruit notes than any rustic characteristics. It delivers a fullness in body yet remains immensely thirst quenching on a hot summer day. Fantastic!

This one pours a slighly hazy golden yellow color, with a small head, and lots of lacing.

This smells like lemon zest, apricot, lime, white wine, oak, and grassiness.

This is really quite great, with a very soft feel to it overall - like some of the best Hil Farmstead saisons, really. There's lots of citrus, with a pleasant lemony dryness, some stone fruit, a touch of vanilla oakiness, and a grassy hop character.

This is light bodied, clean, soft, and creamy, with a great drinkability.

This is a really great solid and straightforward saison. It evokes a really nice feeling of the countryside and springtime.

Quite hazy for a saison; darker amber color, bordering on copper.

Incredibly rustic, funky, peppery, and musty nose.

Equal parts funky and sharp on the palate. It’s not quite a sour, at least not in the way American sours are made, coming across quite like a gueuze, yet still identifiably a saison. Honey, leather, cheese, earth, lemon, vinegar.

A fantastic wild saison, complex and layered, funky and sour and nuanced.
