While much of our work in the realm of spontaneous beer production employs ingredients and processes that follow a Belgian tradition, we’re also interested in exploring the versatility and approachability of spontaneous fermentation outside that lens. Inspired by the ancient farmhouse style of Finnish Sahti, Satu marks our biggest step in a decidedly different direction. Starting with a grist of local unmalted wheat, pilsner, Munich and rye malt and hopped with whole leaf aged hops, Satu sees coolship additions of spruce tips, juniper (needles and berries), citrus and ginger. Aged two years in a combination of gin barrels and neutral French oak casks.

Bottled 11.19.21 and served in a tulip at 58 degrees. Pours a beautiful caramel hue with loose, biscuit-colored head that quickly disperses into a fizzy band around the shoulders. Nose is complex and difficult to place. Fruity/vinegary notes, but not at all off-putting. Taste follows nose; however, it’s even more complex in the flavor profile. Fruit is a bit brighter and there’s a hint of spice at the finish. Mouthfeel is light in body with an assertive acidity and a bright carbonation. Overall, this is an amazing beer. It is quite acidic, but the flavors play together nicely.

Pours a hazy ruby-amber, medium sized head, surprising retention, not a lot of active carbonation. Smell is juniper and dry red wine, berry tartness.
Taste is tart, stronger juniper, jammier berry tartness, some ginger spice, plum juice sweetness, twiggy bitterness.
Mouthfeel is medium bodied, light and fluffy texture. Overall, very interesting and very tasty.

This one pours a malty looking reddish color, with a small head, and lots of lacing.
This smells like black cherry, sweet and maybe slightly stale malt, juniper, ginger, and white wine.
I think I would like this a lot more if the sweetness was toned down a bit, and there was more character from the barrel – particularly the gin barrel. I don’t get a ton of gin here, outside of some juniper. There’s definitely a lot of ginger, and the overall malt sweetness just feels a bit out of place. I’d want some more rye, too, that would help.
This is light bodied, slightly creamy, with very little acidity.
I expected a lot more out of this one, given the brewery’s usual overall quality.
