Ah, Mosaic... it's one of those hops with so much range and definitely one of our favorites. When it's good, Mosaic can hit all the right notes. Every. Single. One. We totally love when it's expression is loaded with berries and tropical fruit and this new school West Coast Pale Ale has all that and more! We whipped this up with our favorite Pilsner malt, some Oat Malt, a dash of Honey Malt, and piled on Mosaic Incognito, Mosaic T90s, and a super neat lot of Mosaic Cryo grown by Obendorf Hop Farms that tastes just like raspberry lemonade! How does mango, guava, cherry, and honeydew sound? A bit of pine? Yuuummm-o!

Spent way too much money on a bunch of beer from North Park Beer Company, Windmill Farms and Bine & Vine. Woof. Anyway, this was one of the reasons I went to North Park first as I looked up what they had to offer and saw this new release (and another). Was labeled online as, “Ah, Mosaic... it's one of those hops with so much range and definitely one of our favorites. When it's good, Mosaic can hit all the right notes. Every. Single. One. How does mango, guava, cherry, and honeydew sound? A bit of pine? Yuuuuummmmm-o!” It’s my favorite hop and it’s coming from a great brewery. Was looking forward to it, especially since it was canned the day before.
Poured a dark golden clear color with 3-to-4 fingers of rocky white head. Lots of bubbles shooting up from the bottom of the glass at fast speeds. Excellent spotty lacing. Perfect retention. (Sight - 4.75)
Smelled huge delicious Mosaic. Specifically mango, guava, rose blossom, floral, raspberry, blueberry, Juicy Fruit and stone fruit. So much flavor. Just as good out of the can with the addition of some sweet malt (maybe the honey malt?). (Smell - 4.50)
Taste wasn’t quite as good as the nose, but still really good. In order got Mosaic, juicy mango, guava, rose blossom, raspberry, blueberry, Juicy Fruit, stone fruit, pine and hints of black pepper. (Taste - 4.25)
Medium body. Creamy texture. Average carbonation. Long, dry finish. (Feel - 4.25)
Just an excellent pale ale. Might have been so good because it was so fresh, but excellent. (Overall - 4.25)
