For this special release, we bottle conditioned our dry-hopped summer saison and aged it for a year before releasing it to you. A light acidity is brought in by adding a touch of Brettanomyces at bottling.

Poured from a 750 ml bottle into a chalice.
Pours a cloudy straw color with a large soapy white head. The head has excellent retention, leaving some sticky lacing before ultimately settling into a brick of foam.
The aroma is... interesting. Slightly metallic with notes of mangoes, pears, pineapple and modest citrus. Very hoppy. Finishes lightly tart with some grassy earthiness.
The flavor is a bit more expected of the style, though still very hoppy: Starts off funky and earthy followed by some tart citrus. Then comes a wave of tropical fruits; namely mangoes and fresh pineapple, then comes some Granny Smith apples. Finishes with some bready malt, Belgian yeast and grassy hops. Weird, different, and excellent.
The feel is medium bodied with pretty good carbonation. Definitely crisp and refreshing for a 7.5% beer, but creamy and smooth going down.
Overall, this is an incredibly interesting and great saison. There's a lot going on here: It's complex and heavy, like a bigger Belgian style beer, yet drinkable, crisp, and drinkable. Drinkable..... drinkability.
