Aquarius is a Saison and is crafted with Pilsner Malt & Spelt Malt, Munich Malt, Flaked Oats, and Acidulated Malt. Spelt, the rustic cousin of wheat and a favorite of many Belgian brewers, adds a slight nuttiness while El Dorado and Huell Melon hops lend bright fruit aromatics.
Aquarius is fermented and aged in oak barrels for several months with our wild yeast culture and then bottle conditioned.

interesting take. spelt, buckwheat. nice head. very drinkable. bottle from Julios. Cellaring more than a year has mellowed this. Well received as a welcome beer at tasting.

Look: Half finger head dissipates fairly quickly and remains as a sparse layer of bubbles on top as well as bubbles clinging to the sides and bottom of the glass. It is slightly hazy with a rich straw color.
Smell: While grainy and slightly "Earthy", most of the aroma is from the hops. Possibly a little bit of pine in there, it's more grassy and mostly fruity. It smells like the beer is going to be slightly tart.
Taste: A slight taste of a belgian saison peeks through here, some oak as well. Most of the taste is from the hops. Fruity hops are most evident, maybe what some would call a melon flavor, possibly honeydew. Like the aroma, there is a bit of grassy hop taste as well as a hint of grain. There is no tartness evident, as the smell indicated. A lingering hop bitterness becomes more apparent as the beer warms up. The beer was well balanced before the bitterness came into the profile.
Feel: Good, smooth mouthfeel with a noticeable carbonation.
Overall: Interesting offering from Cellar West. A blend of a Brett Saison, and an IPA. The brett saison portion of the beer was great, typical of the other Cellar West beers that I have had. I enjoyed the aroma and flavor of the hops, just not the bitterness. I have a second bottle set aside to enjoy in the future. I am curious to see how much the bitterness drops off after aging.
