A - Poured into a Kate the Great tulip a nice crystal clear gold hue with a thin white head that fades to leave light wisps.
S - Aromas of pleasant honey, light grist grain aroma. Faint funky horse barn, little bit of apple peel. Flashes of oak barrels. Nice light fruity notes. Very pleasant. Pouring the bottle third of the bottle really balances out the nose profile.
T - Taste is similar to the nose with loads of apple peel and skins, pleasant subtle funk and saison yeast. The barrel is quite nice as well, flashes off grains and light honey sweetness. The barrel pops much more as does the white wine.
M - Mouthfeel is super over carbonated, distractingly so, yet somehow a bit sticky. That said, pouring the bottle third of the bottle knocks back the carbonation considerably as well as the slick finish.
O - Overall this was a very solid saison. If not for the big over carbonation this would probably be a world class beer. The cork was soaked too, thankfully it didn't taste like that.

Light fizzy head, low retention but ok for style, mostly clear lighter golden pale color, touch of lacing
Nose is quite interesting, good funk with souring bacteria, lacto and pedio, very light cheesy funk, mild grainy gristy malt and big honey, floral as well with a touch of lemony fruit citrus, light apple skin and faint buttery oak, little vinous white wine
Taste pretty sour, good bacteria and souring funk, not quite barnyard funk but earthy and a little cheesy like, more light grainy gristy malt but much less than the nose, and a bit of honey, bright acidity with some mild lemony citrus, light apple skin, fair vinous white wine, mild buttery oak too, finished sticky mild flemmy
Mouth is med bod but feels sticky and attenuated, and way too much carbonation
Overall pretty nice, the over carbonation and under attenuation with sticky feel was a bit off, nose didn't pop as much either, but it had a lot of potential and was quite yeasty
Note. Adding the yeast slurry to the beer made it pop a lot more, great pop on the nose, less sticky and over carbonated, even more enjoyable
