A dry and floral honey beer fermented similar to a Saison with over 200 lbs. of Bee K'Onscious Cipo Uva (Brazilian flower) honey. 2020. COVID-19 Limited Run.

A Belgian-inspired brewer in the transit metropolis at the foot of the Rockies. (Sounds like Paradise to me... but that's just a transit and beer geek speaking.)
Bee Bop is a well-constructed saison; the honey stimulates the salivary glands, but doesn't get so sweet that the ale is not suitable for the table. And Bee Bop has enough other spices to mix well with foods (I had a sandwich and some leftovers.) My only critique is the yeast could be more active. This would make more foam, more aromatic fruit and more bubbles to scrub the palate for more food. This yeast and saison are good, just not yet masterful.
Bruz Beers seems dedicated to the Belgian niche. Based on Bee Bop, I think their ales should go very well with food. If they were to develop a serious kitchen or link up with someone who could, they'd be a great combo. I'd like to visit Denver again soon and would certainly put Bruz on my list. But who knows with Covid and life in general if that visit can happen soon. So in the meantime, I'm going back for Beer Drop for more Bruz. A votre sante'!
