Straw yellow body; wildly lively carbonation; one-finger thick head, persistent and semi-creamy and fluffy. An interesting rustic and herbal aroma; warm and woody. A very hard to describe taste; almost smokey yet with a certain herbal undertone; almost phenolic in nature; very low bitterness. Generally smooth in texture; overall gentle warmth to the beer;
dry.

Ah, oregano. That's the mystery taste. I Googled 'what does bee balm taste like' and that was the first result that popped up. Yes, very herbal. And unique. Personally, I like sage, but I could dig on some more of this bee balm flavor just for a general change of pace. I think the saison format is a great one for this.
