my first beer from these guys, i keep wanting to check out their spot when i am in town but its either limited hours or i get too busy, need to make it a point next time. this is solid, although a little basic as they go in terms of the ferment, a clean saison, not quite generic, i like the yeast and the way it is deployed here, but there isnt a ton going on with it, real drinkable though and pretty well refined, and with some other nuance than makes this cool, definitely would work in a variety of food contexts too. honey colored brew with just a light cloudiness to it and an active white head from the tap. aroma on this is esters of pear and taffy from the ferment, white pepper and coriander too, and a juiciness i dont often associate with the style, earthy white wheat there with some pils malt as the base of this it seems, light and floral and peppy to me, some spiciness, hard to place, subtle and nicely balanced. the flavor shows quite a bit more than the nose, a tea note with the yeast up front, belgian and more familiar on the ferment now, cut flowers, earthy spice, didnt know there was ginger and cayenne in this until after the fact, but it makes sense now, a little tingle like that on the tongue at the swallow was part of this for sure, and its killer with the yeast, which is definitely enhanced by it. white wine, clean citrus, and green tea to finish, good carbonation, lots of body, wheat character, and belgian esters. cool beer, subtle but distinct even with a clean yeast, looking forward to more from these guys!
