Barrel aged wild saison of all-NJ ingredients & producers. 25% spontaneous ale, 75% mixed culture saison, fermented from the same origin: NJ pilsner malt, raw wheat, hand-harvested organic spelt, hay, and old whole leaf hops. Aged sixteen months in NJ Pinot Noir barrels, bottle conditioned with NJ wildflower honey for one year. Produced in collaboration with our New Jersey friends at Rabbit Hill Farms, The Seed, Troon, and Kelly Green.
