Wintering Out
The Referend Bier Blendery

Wintering Out is our spontaneously fermented golden ale refermented with winter's fruits. This 2019 harvest first edition comprises a base blend of 1-, 2-, and 3.5-year-old golden ales, the youngest of which aged in a gin barrel. NJ cranberries were crushed at the blendery and allowed to spontaneously referment the beer to dryness. NJ yuzu was zested by hand at the blender and conditioned for 10 weeks in the beer. Primed for a natural refermentation in the bottle with the addition of NJ cranberry honey.
