Fractal Mosaic is the first release from our small-batch Research Series. A fractal is something simple at the core yet can produce wonderful and amazingly complex results. The fractal series will have only pale malt and a single hop (simple). We will use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, earthy grass, tropical melon, and a hint of berries (complex). The taste is highly resinous, piney, juicey, with a slightly creamy mouthfeel, and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Mosaic” warranted indeed.

16oz can no freshness date (new to TX, purchased 11-27-21). Opened 12-3-21.
2+ finger white head. Long lasting with thick lacing in it's wake.
Oranges, mangoes, and blueberries with a light bubble gum far in the rear. Some cedar as the beer warms. Liking the aroma more and more as it warms, fairly complex.
Sour orange, blueberries, a nice twang of ripe citrus/tropical fruit. A bit of "green" as well.
Full body, soft mouthfeel and low bitterness...spot on to style. Hop flavor-filled and medium length finish that's only slightly sweet.

Pale, yellow-orange body; cloudy; topped with a thick and billowy with head, dense and creamy; faint rings of foam cascade down the glass. Tropical fruit smell with a touch of citrus; . Juicy taste; light fruit sweetness counterpointed with a subdued bitterness; a bit of light berry notes and a touch of musk melon; very light biscuit undertone; powdered sugar. Heavy body; smooth and velvety and a slight acidic bite.
This beer exudes some rich malt and ester qualities. Assuming that Mosaic hops were solely used, I'd say they brewers did a fine job in demonstrating that hop's taste profile. This is a fine and well-produced beer.

A- Tulip receives a fairly cloudy and floury looking golden-orange beer. The head on the beer has a thick and luscious texture with great retention and truly looks like a dollop of bubbly cream. Lacing is plentiful with massive sheets and webs coating the glass.
S- Dank Mosaic hops are poppin' off in this aroma with fruits and weed. Pineapple, melon, guava, papaya, peach, orange, tangerine and apricot come to mind. Oats, whole grains and bread come to mind as well as a medium sweetness.
T- Reminds me of some Equilibrium brews for sure. The fruity hops are first and foremost and it is similar to the aroma with the large stone and tropical fruit notes followed by some citrus, grains and sweetness. Juicy Mosaic hops bring mango, peach, melon, guava as well as dank weed, slight tangerine/orange and pineapple. Oats for sure with a moderate sweetness.
MF- Light-medium bodied with a high level of carbonation. The texture of the beer is frothy and foamy with a crisp fizziness.
Kind of figuring out what this brewery is all about and it is a good thing, overall. A lot of the beers bolster a big presence of stone fruits and tropical fruits with dankness. Mosaic juice with great appearance and a nice moderate ABV.

A: Poured from the can into a tulip glass. Body is hazy dark golden with a half-finger of white head on top.
S: Interesting nose of blueberries, grapefruit and earthy garlic/raw onions.
T: Better than the nose: juicy citrus (grapefruit, oranges), blueberries, and ripe melon. A touch of something earthy as well.
M: Nice juicy feel to this one. A little flat.

This is a nice beer - it's got a unique smell and taste profile that was really intriguing, although in the end it wasn't my favorite. This was a tough one to review for me, because it was hard to put my finger on the elements in the smell and taste. There's definitely some citrus, but nothing too overpowering. The smell might have melon and pineapple character to it. The feel was nice - medium thickness with a little buttery feel to it. I disagree with some of the other reviews about this being more of a session IPA - it's got more weight to it than those, and more pop in terms of smell and flavor. And although the alcohol content is well hidden, it's still there.

A 1 pint can, canned on 29th May 2020. Poured into a Holy Mountain tulip glass.
Appearance: A hazy straw yellow orange colour with a two finger white head that had excellent retention and left lots of nice lacing.
Aroma: Fruity, mango, blueberry, citrus zest and notes of melon.
Taste: Lightly fruity sweet, mango, blueberry, melon, citrus zest, with a lingering bitter finish.
Mouthfeel: Creamy, medium bodied with moderate carbonation.
Overall: Easy to drink. Great balance between sweet and bitter with lots of nice fruit flavours.

Pours a hazy pale straw yellow with a finger and a half of white head. Aroma is dank and earthy with some notes of pine. Taste has the same notes as the aroma but adds citrusy and fruity berry notes as well. The theme of this beer is dank, followed by earthy, followed by pine, and then all the other complex flavors way back in the distance. Medium-ish in body with moderately high carbonation, very smooth and creamy. Overall this is a super drinkable beer. I really enjoyed the dank aspects that the Mosaic took on here.
