A tale of a spontaneous fermentation, isolation, confiscation, rejuvenation, mutation, and finally perturbation. This sour American Wild Ale, is a collaborative effort with our dear friend Dr. Jason Rodriguez. We took our house “honey badger” mixed culture (no saccharomyces) and allowed it ferment over several months before dry hopping it with a touch of citra and galaxy. It pours a hazy golden yellow releasing bright notes of pink grapefruit, lemon, pineapple, and passion fruit. It tastes sour and juicy with similar notes as the smell.

Had on tap. Murky yellow with a few bubbles on a thin white ring. Huge passion fruit, pineapple, and grapefruit star with the supporting aromas of funk, lemon drop candy, and vinegar, it is a beer that is warning you that it is plenty acidic and sweet. And sure enough those two elements shape the mouthfeel with pleasurable brightness though thin, molding the taste into a fruit sweet juice that has a strong tart and acidic bite. Looks like a Budweiser. Poured from a crowler into a pint glass, minimal head of foam dissipating into pretty much nothing in 30 seconds or so.
Not a lot on the nose. Maybe a little lemony? Not offensive but not especially inviting.
Beer tastes pretty good . I was afraid this may be a vinegary, strangely sour mess, but it tasted more subtle and pleasant than I expected. One of the best things about this beer, other than the effervescence which I liked. Nice and bubbly, really crisp and something I genuinely enjoyed.
Decent beer. As some others have commented I think this serves as an excellent base for what would be a worthwhile fruited sour. At 6.something abv not impossible to drink 32 ounces of, although I despise crowlers and would prefer 16 ounce cans. Better than a 750 ml bottle I guess. Recommend.

Pour near clear, very light near golden, moderate off white cap, leaves a fine bubble film and equally fine spots of lacing.
Faint sour fruit nose
On the palate its brightly sour and tart,,,,straight forward and clean, simple and approachable...good entry level sour beer/wild ale....glad I got to try this "base" for other TABA fruited sours

From crowler filled y'day
Beautiful almost clear gold pour topped by three fingers of pure white foam. The head kicks back eventually to a bare cap.
Full aroma that is strongly acetic at first sniff, but carries plenty of rounded tart notes, overripe fruit, a honey/floral sweet lightly beneath it all, and sweet and also bitter citrus wrapping it into a wonderful bouquet.
A strong earthy character joins the flavors from the aroma to make a very full flavored bomb of goodness in the mouth. Not as tart as expected, but plenty of the sharper notes accompany the general yeasty tart it has a'plenty. The overripe fruit flavors pop on the palate. Sip ends with citrus pith, fruity funk, and earthy funk giving a clean drying to it.
Soft on palate, full side of med. body and viscosity, nice low/med. carb., and a finish that is an amazingly clean and delicious linger that begs for next sip.
Extremely refreshing, easy drinking, full flavored, and exceptional. Highest recommendation
