Collaboration with The Eighth State Brewing Company

With a divided frosted face, the Black and White cookie reminded us of the two galactic planes that follow the big-bang model of space, the Galactic Singularity Engine, where condensed galactic matter, time, and entropic energy are combined and start a new cycle by using dual free energy or in our case, Chocolate and Vanilla!

We wanted to make an Imperial Stout that paid homage to one of NY’s famous cookies.

We brewed up a thiccc base, added Fiji and Bolivia cacoa nibs, Madagascar and Tahitian Vanilla and 30 lbs of Black and White Cookies finished with a touch of lactose. The aroma is vanilla bean mixed with chocalate chunks and is reminiscent of a true black and white cookie. Upon first sip, you’ll get a deep dark roasty chocalate flavor included with sweet vanilla with an incredibly decadent mouthfeel. The linger of the dark chocolate finish cuts through the sweetness and gets you ready for the next sip. This beer is best enjoyed with a galactic Black and White cookie on the side!
