Collaboration with Horus Aged Ales
We let the Batch 1 Accipiter base rest for 14 months in a 7 year Willet barrel before conditioning it on Shredded Coconut, Macaroon Coconut, Coconut Macaroon Cookies, Thai Bananas, and Cacao Nibs. Barrel Aged Accipiter pours pitch black with a khaki colored head. Aromas of banana puree, coconut macaroons, and brownies come alive with decadent flavors of fresh baked fudge, banana custard drizzled with chocolate syrup and bourbon drenched coconut snowballs. The barrel offers a nougat like finish with a light vanilla char balancing the adjuncts perfectly with its boozy barrel notes.
