After 20 months in George Dickel barrels, we are happy to introduce Barrel Aged Macademics, a collaboration with Great Notion Brewing. Following its time in the barrel, we added a colossal amount of macadamia nuts, coconut, cacao and Madagascar vanilla beans.
Barrel Aged Macademics pours pitch black with a quickly dissipating head. We get a coconut cake and crushed macadamia nose with cascading flavors of chocolate covered macadamias, Nesquik, coconut macaroons and white chocolate macadamia cookies dunked in hot chocolate with a boozy, decadent and satisfying vanilla custard finish, making the math surely check out on our latest creation.

poured from a sky blue-waxed 500mL bottle into a TG DBA tumbler. pours viscous and black with a crackling mocha brown foam cap that remains only as a thin ring of tiny bubbles around the rim of the glass. a good amount of barrel on the nose as well as vanilla, chocolate and coconut. same on the taste. i do not get much nuttiness and i get less barrel in the taste than on the nose. mostly just in the finish but this is really quite well rounded even if it is on the sweeter side (which i expected it to be). this has a thick, full mouthfeel. it’s as viscous as the pour would lead you to believe it is and the inky black liquid stains the glass as it’s consumed. it’s certainly on the pastry side but the barrel helps cut that sweetness or at least balance it out. i was quite glad to not really perceive much in the way of macadamias, or at least that it wasn’t dominated by them. overall, a really good barrel-aged pastry stout.
