Imperial Stout with Emperor's Coconut, Pistachio, Coffee, Vanuatu Vanilla, and Marshmallow
Barrel Aged Tetrapod started its journey 17 months ago when we took a big stout base and aged it in two select Taconic bourbon barrels. Following our sensory panel and a remote brainstorming session with the TA crew, we blended both and added Emperor’s coconut, pistachios, Vanuatu vanilla, marshmallow, and coffee from Finca’s Coffee, out of Miami, Florida, a TA favorite. After consulting with Finca's, we chose their Obata/Lempira coffee roast, which has lent great flavors to this collaborative project.
Layered flavors of decadent honey fudge, chocolate-covered coconut chips, nutty pistachio biscotti, coffee liquor, chunks of cookie dough, and sarsaparilla all morph into one anther as this beer finishes with an outrageous mouthfeel that coats the palate in a thick glaze before vanishing into what is a call for the evolution into the next sip.

Poured at fridge temp. Pours a super thick and viscous black with a very thin layer of brown head. The nose is a wonderful mix of pistachios, vanilla, chocolate, marshmallow, and coconut. Not getting much barrel here.
The taste is fantastic. Vanilla for days, a touch of cinnamon, marshmallow milk chocolate, slight coconut, a hint of licorice, and very subtle coffee. A hint of bourbon comes through, but this isn't a bourbon bomb.
The mouthfeel is insane. THICK and creamy. The aftertaste is thick chocolate.

This 500ML bottle is topped with rubbery light blue wax that dripped all the way down to obscure one of the ingredients. Split with my wife.
Flat, still black that I finally coax to life with a long waterfall pour. The nose brings coconut & chocolate, not in that order.
Barrel Aged Tetrapod brings chocolate heat. Strong chocolate (not listed in the ingredients…) & a stinging flick of booze (also not listed on the label) up front. Mid-palate brings strong coconut & some of it is floating on top of the impenetrable surface along with oodles of sweetness/vanilla. Multiple alleged ingredients are MIA; the coffee in particular would be welcome to cut down the insulin creation. Seriously thick. Splitting this pint+ bottle is a good serving size.
Bourbon being present physically would have kicked this up a notch, as would the coffee. As it, a very nice brew.

500ml bottle at share. Near black pour, no head. Sweet, chocolate aroma, coconut, nutty. Taste is coconut, sweet, coffee, chocolate and vanilla. Syrupy feel, thick, heat comes in at the finish.
