Bottled in 7/2021; consumed on 5/15/2024
Pours a slightly foggy, golden copper body topped with just over a finger of rich, white cap; decent head retention leaves a sparse cap, thin, frothy collar, and the haphazard array of thin, webby lacing holding tentatively around the walls of the glass.
Aromas of ripe lacto-funk are tempered with soft oatmeal bread undertones as a peak of strawberry zest settles to wet garden residuals and a moist, oaky overlay, leaving earthen sweetness a parting impression as the bouquet fades.
Taste opens to fresh rhubarb layered with bright lacto-funk, with supportive accents of light florality and vitamin minerality settling past the mid-palate as notes of loam, wet grain, and wheat bread fade on the back end of the profile.
Mouthfeel offers a light body and a modest fluff of carbonation, leaving a moderate-mild acidity meandering to a quenching peak as minimal tartness yields a glossy texturing and semi-wet finish.
A grounded base of oaken funk engages expressively natural impressions of rhubarb and oat, producing the sort of welcoming, drinkable simplicity at the core of the style (and a quality Wunderkammer handles exceptionally).

Very solid and well balanced beer. I like this even more than the Fig 3 which is also Rhubarb based. I think the oats we’ll temper the flavor palate.

500 ml. bottle.
Brewed Feb. 2021.
Bottled July 2021.
Moderate pour yields a one inch plus white head over a slightly hazy golden body with sticky lacing.
Nose of citrus, green apple, slight berry with a bit of earthiness.
Taste mirrors nose fairly close with citrus, then green apple, and then finishing with a grapefruity, earthy dryness. Very interesting and quite tasty!
Feel is very good as expected from this master brewer.
Overall, another great job from an undisclosed location in Albany, VT.
Cheers!
