First, a defense of my choice of styling. This is the fifth rendition in a series that Benchtop calls grisettes. They all use Brett, but they have the key qualities common to saisons/grisettes (a mixed malt bill and a saison yeast.) It also seems to be Benchmark's trademark to use the foeder in many different styles. Hence, this is a grisette to me.
As for Version 5, it's not too funky and I am funk-sensitive. So they understand Brett and use it to achieve a drying balance with the otherwise sweet malt and fruit-inducing yeast. I will let others more intrepid with Brett analyze #5.
For my micro-review of Benchtop... I'm impressed. A six year old has opened their second taproom and they serve a food specialized to their unique brewing: hot dogs. Probably ten varieties to go with their mostly tart brews and, of course, an even bigger variety of fixings to go on the dogs. But the founder is also a food scientist, so this is all a systematic kitchen.
A husband and wife team that are having the time of their lives. Bravo. Lots of Overall Hugs.
