this is tasty, a stronger version of their quiet depths, with french saison yeast, it hides its alcohol really well, and might be the best of their saison types, but its still a bit samey, i mean so many of them taste like the same yeast, super warm fermented and overly estery at the expense of any rustic grain character or hop uniqueness. this one is simple aside from being strong, saaz hops abound, but it drinks light, round body but not heavy, notes of white wine and pear and light baking spice from the yeast, but there is a grassy vegetal element too from the hops, a lemon note, and a refreshing dryness and carbonation, more lively than a lot of their stuff on that front, and really fresh tasting to me, close to be awesome but pushing phenolic on the yeast. even though its the strongest of these i have see from them, to me its one of the easier drinking, it has nice balance and the mouthfeel helps make it for me. these guys need to get some brett and wood going, these all seem capable of a lot more with the right secondary fermentations, they all seem like works in progress at this point. i think they should commit to making their saison types as good as their hoppy beer...
